Sweet Potato and Dill Tuna Patties
These tuna patties are easy, delicious, and paleo!
- 1 can tuna
- 1/2 cup cooked sweet potato, mashed
- 2 TBS white onion, chopped
- 2 TBS fresh dill, chopped
- 1 TBS coconut oil
- 1 TBS lemon juice
- 1 TBS water
- 1 TBS tapioca starch
- 1/2 tsp salt
- coconut oil for frying
Drain liquid from can of tuna.
In medium mixing bowl, combine tuna, mashed sweet potato, white onion, dill, lemon juice, coconut oil, and salt.
Form mixture into 4 patties.
Add coconut oil to frying pan and heat over medium heat. Once oil is hot, add patties and brown on eat side, 3-4 minutes per side.
Service with veggie side of choice. Enjoy!
