Paleo Banana Bread
This recipe makes 8 mini loaves of paleo banana bread. Delicious and with no added sugar! The natural sweetness from the banana and the coconut sugar make it a tasty healthy treat.

Instructions
Preheat oven to 350 and grease your mini loaf pan with coconut oil
Combine buckwheat flour, coconut flour, baking soda, beef gelatin and coconut sugar in a mixing bowl
In a separate bowl, add mashed bananas, melted butter, applesauce, vanilla and flax eggs. Add this wet mixture to the dry ingredients
Add apple cider vinegar and mix thoroughly
Pour into 8 mini loaf baking pan. Bake at 350 for 30 minutes
Notes
***make by combining 1 TBS ground flaxseed with 3 TBS warm water for one egg. Make 5 "eggs" and let sit for ten minutes. The mixture will become thick
