Dice chicken into cubes, set aside
Heat coconut oil in a large skillet over medium heat. Sauté onions until translucent. Add in ginger, garlic, and spices and sauté for 2 more minutes.
Add diced chicken and stir until cooked through (7-10 minutes). Add in water and tomato paste.
Stir in coconut milk and bring to a boil. Reduce to a simmer and continue cooking for about 5 minutes.
Meanwhile, make your cauliflower rice by adding the florets to a food processor or blender and process until the cauliflower is a rice-like consistency. You can also buy your cauliflower rice.
Mix in lemon or lime juice with the cauliflower rice.
Remove butter chicken from the heat and pout over cauliflower rice and enjoy!
