Avocado Pesto Zucchini Noodles

These low carb noodles are a great replacement for pasta! The recipe calls for tomato, but you can omit if you are sensitive to nightshades.

Equipment

  • 1 spiralizer or you could buy pre-spiralized zoodles, or cut zucchini into ribbons using a vegetable peeler

Ingredients
  

  • 3 medium to large zucchini cut into noodles using a spiralizer
  • 1 ripe avocado peeled and pitted
  • 1 cup fresh basil leaves
  • 1/2 tbsp extra virgin olive oil
  • 3 tbsp fresh lemon juice
  • 1 clove garlic
  • 1 cup sliced cherry tomatoes optional
  • 1 tbsp nutritional yeast optional
  • salt and pepper to taste

Instructions
 

  • Prepare the zucchini noodles by spiralizing (unless using pre-spiraled).
  • Make the avocado pesto by combining the avocado, basil, olive oil, lemon juice, and garlic in a blender or food processor until smooth. Add salt ,pepper, and nutritional yeast (if using) to taste.
  • Sauté the zucchini noodles in a pan with oil or butter until soft.
  • Fold the avocado pesto into the zucchini noodles. Also fold in the cherry tomatoes if using. Let simmer for 2 minutes. You can add meat sauce, chicken, or other protein of your choice!
