Tigernut Carob Chip Cookies
These delicious cookies are gluten, dairy and grain free! Plus no refined sugar! They use carob chips for a chocolate alternative but can be made with dairy free chocolate chips, too.
- 1 cup Organic Gemini Tigernut Flour
- 2 TBS arrowroot powder, or cassava flour
- 2 tsp gelatin
- 1 tsp baking soda
- 1/4 tsp sea salt
- 1/4 cup 4th and Heart vanilla bean ghee, (butter or palm oil can be used) room temperature
- 1/4 cup coconut oil, or extra virgin olive oil melted
- 1/4 cup maple syrup
- 1 tsp vanilla extract
- 1/2 cup Missy J's Carob Chips
Preheat oven to 350 degrees. Line a cookie sheet with parchment paper.
In a medium bowl, whisk together, the dry ingredients until incorporated. Stir in ghee, coconut oil, maple syrup and vanilla until a smooth dough forms. Stir in carob chips or chocolate chips if desired. You can also add raisins, pumpkin seeds, or other additions.
Drop rounded tablespoons of dough onto parchment paper, leaving 2 inches between each cookie. Gently flatten each cookie to about 1/2 inch high using a spoon or the palm of your hand.
Bake for 8-10 minutes, watching closely, until edges are golden brown
Remove from oven and let cool. Enjoy!
