No Bake Tahini Fudge Brownies
These no bake brownies are rich and delicious. They're nut free and can be made cocoa free too by using carob powder and carob chips.
Ingredients
Brownies
- 1/2 cup coconut flour
- 1/2 cup cocoa powder *
- 1/2 cup tahini Whole Foods 365 brand is best
- 3/4 cup sticky sweetener of choice honey or maple syrup
- 1/2 cup pumpkin puree
Frosting
- 1/2 cup cocoa powder
- 1/4 cup coconut oil
- 3 tbsp maple syrup or honey
Instructions
Brownies
- Line a square pan with parchment paper and set aside.
- In a large mixing bowl, add your coconut flour and cocoa powder and set aside.
- In a saucepan, melt your tanini with your honey until combined.
- Add the wet mixture to the dry mixture and mix until fully incorporated. Stir in the mashed pumpkin until batter is even. If batter is too thick, add a tablespoon or more of milk of choice.
- Pour batter into the lined baking dish and refrigerate for at least 30 minutes to firm up. While no bake brownies are firming up, make your frosting.
Frosting
- Combine all the ingredients in a saucepan and melt together until fully combined. Pour over brownies.
- Optional: add pumpkin seeds, chocolate or carob chips, dried cherries, coconut flakes

*You can make this recipe cocoa free by using carob powder and carob chips
