Avocado Pesto Zucchini Noodles
These low carb noodles are a great replacement for pasta! The recipe calls for tomato, but you can omit if you are sensitive to nightshades.
Equipment
- 1 spiralizer or you could buy pre-spiralized zoodles, or cut zucchini into ribbons using a vegetable peeler
Ingredients
- 3 medium to large zucchini cut into noodles using a spiralizer
- 1 ripe avocado peeled and pitted
- 1 cup fresh basil leaves
- 1/2 tbsp extra virgin olive oil
- 3 tbsp fresh lemon juice
- 1 clove garlic
- 1 cup sliced cherry tomatoes optional
- 1 tbsp nutritional yeast optional
- salt and pepper to taste
Instructions
- Prepare the zucchini noodles by spiralizing (unless using pre-spiraled).
- Make the avocado pesto by combining the avocado, basil, olive oil, lemon juice, and garlic in a blender or food processor until smooth. Add salt ,pepper, and nutritional yeast (if using) to taste.
- Sauté the zucchini noodles in a pan with oil or butter until soft.
- Fold the avocado pesto into the zucchini noodles. Also fold in the cherry tomatoes if using. Let simmer for 2 minutes. You can add meat sauce, chicken, or other protein of your choice!
