Butter Chicken and Cauliflower Rice
Add this flavorful dish to your weekly menu!
Ingredients
- 12 oz Chicken Breast
- 2 tbsp Coconut Oil
- 2 ea Onion, diced
- 2 ea Garlic Clove, minced
- 2 tbsp Ginger, chopped or grated
- 1/4 cup Tomato Paste
- 2 tsp Paprika
- 1 tbsp Curry Powder
- 2 tsp Garam Masala
- 1 tsp Sea Salt
- 1 tbsp Chili Powder
- 1/4 cup Water
- 1 cup Canned Full Fat Coconut Milk
- 1 head Cauliflower
- 1/2 ea lemon or lime, juiced
Instructions
- Dice chicken into cubes, set aside
- Heat coconut oil in a large skillet over medium heat. Sauté onions until translucent. Add in ginger, garlic, and spices and sauté for 2 more minutes.
- Add diced chicken and stir until cooked through (7-10 minutes). Add in water and tomato paste.
- Stir in coconut milk and bring to a boil. Reduce to a simmer and continue cooking for about 5 minutes.
- Meanwhile, make your cauliflower rice by adding the florets to a food processor or blender and process until the cauliflower is a rice-like consistency. You can also buy your cauliflower rice.
- Mix in lemon or lime juice with the cauliflower rice.
- Remove butter chicken from the heat and pout over cauliflower rice and enjoy!
