Butter Chicken and Cauliflower Rice

Add this flavorful dish to your weekly menu!
Servings 4


  • 12 oz Chicken Breast
  • 2 tbsp Coconut Oil
  • 2 ea Onion, diced
  • 2 ea Garlic Clove, minced
  • 2 tbsp Ginger, chopped or grated
  • 1/4 cup Tomato Paste
  • 2 tsp Paprika
  • 1 tbsp Curry Powder
  • 2 tsp Garam Masala
  • 1 tsp Sea Salt
  • 1 tbsp Chili Powder
  • 1/4 cup Water
  • 1 cup Canned Full Fat Coconut Milk
  • 1 head Cauliflower
  • 1/2 ea lemon or lime, juiced


  • Dice chicken into cubes, set aside
  • Heat coconut oil in a large skillet over medium heat. Sauté onions until translucent. Add in ginger, garlic, and spices and sauté for 2 more minutes.
  • Add diced chicken and stir until cooked through (7-10 minutes). Add in water and tomato paste.
  • Stir in coconut milk and bring to a boil. Reduce to a simmer and continue cooking for about 5 minutes.
  • Meanwhile, make your cauliflower rice by adding the florets to a food processor or blender and process until the cauliflower is a rice-like consistency. You can also buy your cauliflower rice.
  • Mix in lemon or lime juice with the cauliflower rice.
  • Remove butter chicken from the heat and pout over cauliflower rice and enjoy!
