Sweet Potato and Dill Tuna Patties
These tuna patties are easy, delicious, and paleo!
Ingredients
- 1 can tuna
- 1/2 cup cooked sweet potato, mashed
- 2 TBS white onion, chopped
- 2 TBS fresh dill, chopped
- 1 TBS coconut oil
- 1 TBS lemon juice
- 1 TBS water
- 1 TBS tapioca starch
- 1/2 tsp salt
- coconut oil for frying
Instructions
- Drain liquid from can of tuna.
- In medium mixing bowl, combine tuna, mashed sweet potato, white onion, dill, lemon juice, coconut oil, and salt.
- Form mixture into 4 patties.
- Add coconut oil to frying pan and heat over medium heat. Once oil is hot, add patties and brown on eat side, 3-4 minutes per side.
- Service with veggie side of choice. Enjoy!
