Tom Ka Soup

Enjoy this soup on a chilly day! Can be made Nightshade-Free if you omit the tomatoes and cayenne.


  • 64 oz chicken broth
  • 2 cloves garlic
  • 2 tsp fresh ginger, chopped
  • 4 tsp raw coconut sugar (optional)

Ingredients to add after blending

  • 3 ea chicken breast cut into thin strips
  • 27 oz coconut milk, canned
  • 1/4 tsp cayenne pepper (or to taste)
  • 1/2 ea lime, juiced
  • 1 carton white mushrooms, cut into bite sized pieces
  • 1 carton cherry tomatoes, cut in half
  • 1/2 cup fresh cilantro


  • Simmer first 4 ingredients until all ingredients are heated through
  • Pour mixture into a blender and blend until the garlic and ginger are blended into the mixture.
  • Return this mixture to the stove top and add last 7 ingredients
  • Bring to a boil and cook until chicken is cooked
  • Remove from heat and rest for 10 minutes before serving.
