Paleo Banana Bread
This recipe makes 8 mini loaves of paleo banana bread. Delicious and with no added sugar! The natural sweetness from the banana and the coconut sugar make it a tasty healthy treat.
Ingredients
- 1 cup buckwheat flour
- 1/2 cup coconut flour
- 1 TBS baking soda
- 1/2 TBS beef gelatin
- 1/3 cup coconut sugar
- 1/2 stick butter melted
- 1/3 cup applesauce
- 1 tsp vanilla extract
- 4 bananas mashed
- 5 flax eggs ***
- 1 TBS apple cider vinegar
Instructions
- Preheat oven to 350 and grease your mini loaf pan with coconut oil
- Combine buckwheat flour, coconut flour, baking soda, beef gelatin and coconut sugar in a mixing bowl
- In a separate bowl, add mashed bananas, melted butter, applesauce, vanilla and flax eggs. Add this wet mixture to the dry ingredients
- Add apple cider vinegar and mix thoroughly
- Pour into 8 mini loaf baking pan. Bake at 350 for 30 minutes
Notes
***make by combining 1 TBS ground flaxseed with 3 TBS warm water for one egg. Make 5 "eggs" and let sit for ten minutes. The mixture will become thick
