Tom Ka Soup
Enjoy this soup on a chilly day! Can be made Nightshade-Free if you omit the tomatoes and cayenne.
Ingredients
- 64 oz chicken broth
- 2 cloves garlic
- 2 tsp fresh ginger, chopped
- 4 tsp raw coconut sugar (optional)
Ingredients to add after blending
- 3 ea chicken breast cut into thin strips
- 27 oz coconut milk, canned
- 1/4 tsp cayenne pepper (or to taste)
- 1/2 ea lime, juiced
- 1 carton white mushrooms, cut into bite sized pieces
- 1 carton cherry tomatoes, cut in half
- 1/2 cup fresh cilantro
Instructions
- Simmer first 4 ingredients until all ingredients are heated through
- Pour mixture into a blender and blend until the garlic and ginger are blended into the mixture.
- Return this mixture to the stove top and add last 7 ingredients
- Bring to a boil and cook until chicken is cooked
- Remove from heat and rest for 10 minutes before serving.
