Tigernut Carob Chip Cookies
These delicious cookies are gluten, dairy and grain free! Plus no refined sugar! They use carob chips for a chocolate alternative but can be made with dairy free chocolate chips, too.
Ingredients
- 1 cup Organic Gemini Tigernut Flour
- 2 TBS arrowroot powder, or cassava flour
- 2 tsp gelatin
- 1 tsp baking soda
- 1/4 tsp sea salt
- 1/4 cup 4th and Heart vanilla bean ghee, (butter or palm oil can be used) room temperature
- 1/4 cup coconut oil, or extra virgin olive oil melted
- 1/4 cup maple syrup
- 1 tsp vanilla extract
- 1/2 cup Missy J's Carob Chips
Instructions
- Preheat oven to 350 degrees. Line a cookie sheet with parchment paper.
- In a medium bowl, whisk together, the dry ingredients until incorporated. Stir in ghee, coconut oil, maple syrup and vanilla until a smooth dough forms. Stir in carob chips or chocolate chips if desired. You can also add raisins, pumpkin seeds, or other additions.
- Drop rounded tablespoons of dough onto parchment paper, leaving 2 inches between each cookie. Gently flatten each cookie to about 1/2 inch high using a spoon or the palm of your hand.
- Bake for 8-10 minutes, watching closely, until edges are golden brown
- Remove from oven and let cool. Enjoy!
