Tigernut Carob Chip Cookies

These delicious cookies are gluten, dairy and grain free! Plus no refined sugar! They use carob chips for a chocolate alternative but can be made with dairy free chocolate chips, too.

  • 1 cup Organic Gemini Tigernut Flour
  • 2 tsp gelatin
  • 2 TBS arrowroot powder
  • 1 tsp baking soda
  • 1/4 cup 4th and Heart vanilla bean ghee room temperature
  • 1/4 cup coconut oil melted
  • 1/4 cup maple syrup
  • 1 tsp vanilla extract
  • 1/2 cup Missy J's Carob Chips


  • Preheat oven to 350 degrees. Line a cookie sheet with parchment paper .
  • In a medium bowl, whisk together, the dry ingredients until incorporated. Stir in ghee, coconut oil, maple syrup and vanilla until you achieve a smooth dough. Stir in carob chips or chocolate chips if desired. You can also add raisins, pumpkin seeds, or other additions.
  • Drop rounded tablespoons of dough onto parchment paper, leaving 2 inches between each cookie. Gently flatten each cookie to about 1/2 inch high.
  • Bake for 8-10 minutes, watching closely, until edges are golden brown
  • Remove from oven and let cool. Enjoy!
